From time to time I'll give you simple recipes for simple Farang food that can be made easily with local indegrents available in our area.

Well all my sporting exploits have given me hunger pangs so  I have decided to move on to something else close to my heart,,,GRUB! hungry1

Following Admins admirable lead I have decided to give you the benefit of one of my delicious recipes and hope other members will follow suit. happy2

All the ingredients are readily available with perhaps the exception of anchovies but they are available in Bangkok and Korat.

So you need some firm sweet red peppers.

Some cherry tomatoes

Couple of garlic cloves

Olive oil

Anchovies 

Loaf of French bread & a bottle of nice red. party9



Cut the peppers in half and de seed them, if you cut them through the stalk it will help them retain their shape whilst cooking.

Chop the garlic cloves into fine slices, cut cherry tomatoes in half and chop a few anchovy fillets into small pieces amount depending on how salty you like things.

Fill the pepper halves with tomatoes along with a few pieces of sliced garlic and anchovie pieces. Then fill the pepper halves with olive oil. If required add fresh ground pepper to taste.

Put a small amount of olive oil in a baking dish to stop them sticking. Then bake them in a hot oven until the edges begin to burn (gives it a nutty flavour) approx 45 + mins.

Put the French bread in the oven for a few mins to warm, pour a large glass of red and enjoy, French bread ideal for soaking up the oil and juices.

Then have another large glass of red and a nap!  party9 tired2

great recipe, but where you can get anchovie in Buriram ?

Apart from "pizza company" Extra anchovie..  :biggrin:

Many kind of dishes can be made and upgraded when add anchovies. for example I have special sardines salad with anchovy recipe to give you.. umm.. later on..  confused5

Shakshuka
A recipe for one of the most popular egg dishes in Israel.

This recipe is so easy to make that even your thai partner can easily make it and even enjoy to eat it later !! (just keep it spicy). 

The Shakshuka Recipe
Yield: 6 servings

1 medium size Onion, cut to small pieces.
 
2 pounds fresh tomatoes, unpeeled and cut in quarters, or one 28-ounce can tomatoes

6 cloves garlic, roughly diced

2 teaspoons salt, or to taste

1 teaspoon sweet paprika

2 teaspoons tomato paste

1/4 cup vegetable oil

6 large eggs


1. pour the vegetable oil into a 12-inch frying pan,then put the onion pieces until they get clear color.

2. Place the tomatoes, garlic, salt, paprika, tomato paste in the pan. Bring to a simmer and cook, uncovered ,over low heat until thick, for about 25 minutes, stirring occasionally.

3. Bring to a sim­mer and break the eggs over the tomatoes. Gently break the yolks with a fork. Cover and continue to cook for about 3 to 4 minutes, until the eggs are set. Bring the frying pan directly to the table. Set it on a trivet and spoon out the shakshuka.
* Though,Eat without spoon and with hot baugette bread pieces is tastier. !!


**This recipe can be modify to match different flavours, such as:adding mushrooms,meat from any kind,red hot chilly to spicy the recipe is also recommended if you'de like to share with you thai partner  confused1 however "Pala" is not recommended as n add-on. steamingMad

Anyway I continue with my simple farang food recipe journey  cool1

Just started to make pickled cucumber in salt, results within few days.

Some farang gave me a speciel recipe for unique cheese that will make you go nuts that its even possible to have it in Thailand and Isaan especially!!!its so simple!! jumping8
Project will start within Max 2-3 days.

pickled cucumbers in salt COMPLETED !!

indigrients:

Small Cucambers.

2 red chillies.

3 teeth of garlic.

2 big spoons of salt.

1 medium size Glass jar. (Plastic jar is not recommended as the taste can be damaged).

Recipe:

-Put first the garlic teeth to the bottom of the jar.
-Put the cucambers inside the jar.
-between the cucambers put the red chilies not before you cutnotch them.
(to spice a little the pickles..).

Take 2 glasses of water (drinking water not the city hall water..  sick1) and mix with 2 spoons of salt untill the salt mix with the water.

*better practice is to boil the water with the salt,it will also help to shortcut the pickle proccess as well.

pour the water into the jar and close it hermetically(!).

Leave the jar in a temperature room (not inside the fridge).
Proccess will take between 4-5 days.
When the cucambers are ready keep the jar in fridge.

difference between the taste or the recipe?

I prefer to pickle them in salt as I dont like pickles in Vinegar.but of course its a question of taste only. both will do the job.. jumping9

Hi again, ok not 2-3 days,had some issues needed to be taken care of..   confused3

Simple recipe for a middle eastern cheese "Labane":

Indigrants:

1 sour cream box ("makro" milk-fridge / 31 baht).

1 Litre of milk 3% fat.

1/2 table spoon. (depend how salty you want your cheese,but this one reccomended by me).


Recipe:

Pour all the milk into a pot and boil the milk until the milk is hot.then take the pot off and let the
milk get cool in room temperatue.

Once the milk is cooled enough pour ALL the sour-cream iinto the milki and mix together.
Cover the pot and leave it over night-time (10 hours).

Morning you'll open the pot and see the milk has gotten thicker and have some blocks of cheese,mix it again,add the salt and put in fridge for 1 hour.

Later on-take a piece of cotton cloth and pour the cheese into it and tie it together.hang it under the sun for 10 more hours.
*this action is to make the cheese dry and let all the water inside the drop out.its also give the cheese the sour taste that is unique for this type of cheese (and few others..).

As you can see it takes a very long time but most time you just wait and let the natural proccess make the job for you..
It taste devine!!  happy2

Adding just now the picture to show the proccess of making the cheese,so.... ::) here,thats how you should hung the cheese and let the water drip off through the cotton cloth ,when its ready just take the cheese out with clean spoon or something to a box and back to the fridge.
just keep it clean,try and you'll see its worth more then any cheese you'll buy in here. ;D

Pictures of the cheese itself are not available as I ate it straight away with friends later in the same day in the evening forgetting I need to make photo for you guys..never mind next time more photos and of course more recipes..  party9

Give me something from your own as well.it can help alot to liven up the forum here on this part.

Back to "simple farang recipe" , this time a very simple recipe you all can do at home.
(*be carefull from the sweet mionez,it can ruin any recipe. ??? ,on this point I'll give you a gold advice,only "kraft" brand or the home-made french guy mionez selling in "tuwikit", don't be tempted by price nor size of the jar. :laugh: ).

So,today's recipe: EGG SALAD: 2 versions:

Version 1:

Indigrants:

2 boiled eggs.

1 medium size boiled potato.

2 big spoons of mionez.

Salt & Black Pepper.

Take the boiled eggs and clush them with a fork,do the same with the potato.
Mix together with the mionez and add salt and pepper according to the taste.

That's it,it's ready and can be as a side salad with any main dish or simply on bread.

UPGRADE OPTIONS:
*Add small cuted cucamber pickles to the salad.
*Add small table-spoon of mustard (prefered "dijon") to the salad.
*Add onion (green onion is possible as well) to the salad.

Tuna lovers: Add tuna into the salad and mix,amount depand on your personal taste.  happy2
Version 2:  Same but without the potatos. (I know its hard sometime to find potatos in the villege.

Eggplant Tomato Salad:

Ingredients:
1 medium-small Eggplant
1 medium-small Onion.
3-5 teeth of garlic.
5 medium size of tomatoes.
3-5 Red Chili.
1/2 tea spoon of salt.

Instructions:

Take a steel net and place it on the gas stove.
Open the gas and light up fire and grill the eggplant (complete,don't cut it yet!).
Grill it on all sides until the cover start(!) to get burn, just to get the flavor and cook the eggplant properly.

Take another pan and put some oil in, put the onion,garlic and chili (cutted to small pieces) into the pan and roast all of it until the onion will lose its color. (but don't burn it).
Put the Tomatoes in and add some water in (half small glass of water will be enough, use clean water of course,not from the tap).
Cover the pan until all tomatoes get cooked.

In the mean time, the eggplant already got cool enough that you can take off all the inside and separate it from its black cover.
*The smell will be good.  smilenod

Cut the clean eggplant into small pieces.

As all the tomatoes in the pan will be soft and ready, mush than to complete process.
Add the eggplant and close the gas/fire.

Stir and mix gently.
Let it chill and its ready to eat.
*Can store in a box in the fridge and eat later as well.
 
Good as sandwich salad to spread on bread or eat as side dish/starter.

Ingredients:

Mush the garlic and chili together in traditional Thai "som tam" kitchen hardware.

Take a medium size box/dish and pour all the mix together with the eggplant.
Add lemon and mix.

Good with toast bread and as appetizer.
*Can add 2 spoon of Moines to the recipe as well.(Without lemon)

How to make Shawarma at home?

Shawarma is like the ultimate on the go meal.
Thinly sliced meat, wrapped in a pita bread with veggies and sauce is a delicious quick meal.

But what you don't know is that anyone can do it at home easily! Even in Buriram!!
;)

Ingredients:

1 box (around 300-400 Gram) of boneless, skinless chicken thighs or breasts (thinly cut).
1 box (around 300-400 Gram) of chicken hearts.
1 flat big spoon of shawarma ready spice mix.
1/2 tea spoon of salt.
1 small-medium onion (I recommend on red onion).
1 flat big spoon cooking oil.

Tip:  Can also add chicken liver pieces into the mix.

Instructions:

Wash all the meat with clean water.

Cut the chicken pieces into very thin slices.
Cut the onion to thin slices.

Mix all the meat with the onion and add 1 flat big spoon of shawarma ready spice mix.
Massage the meat together to get the spices good into the meat mix.

Take a big pan (preferably TEFLON) and add really little bit of oil (The meat have lots of juices that will go out when cook all together.

Pour all the mix into the pan and keep mix it in the pan, make sure the chicken hearts get cooked and keep stir it from time to time to close the meat.
Add 1/2 tea spoon of salt and stir.

That's it, the shawarma is ready, too bad I can't get the smell to you also.  biglaugh  sissies

You can eat it with anything as side dish, potatoes, bread or anything else!  hungry1

Simple Chili paste recipe

Here is a simple recipe for Chili Paste.  steamingMad

The chili paste should be stored in a jar in the refrigerator. Use as needed.

The Chili paste can be used as bread spread when doing sandwich and for add on when cooking to spice things up! redman

Chili Paste (Quick Recipe) (very hot paste)

Ingredients:

1 box/bag of fresh chillies.

4-5 garlic cloves, peeled and roughly chopped.

2 medium size of peeled red tomatoes.

1/4 glass of water.

1 flat teaspoon salt.

Put all into blender or food processor.

Add salt.

Put into sterilized bottle/jar and store in refrigerator.

good for up to 14 days.

Making spaghetti is so easy to do..  

The ingredients are cheap as well.

Pack of small spaghetti cost around 30-70 Baht and enough for 2-4 people.

Making spaghetti:

1 medium size pot.

Pour clean water and boil it until the water have bubbles.

Carefully insert the spaghetti into the boiled water (some people like to break the spaghetti to half while doing it but I think it ruin all the fun of eating spaghetti, DONT BREAK THE SPAGHETTI!!  ;) ).


Simple tomato Spaghetti sauce:

1 small onion (white/red; It doesn't matter).

4-5 medium size of red tomatoes.

2-4 teeth of garlic.

2-5 red chillies.

1 tea spoon of salt.

1 tea spoon of white pepper
Cut the onion into small pieces, fried with little bit oil, add the tomatoes (cut them and take off the bad part in the middle) and add the chillies and garlic, keep boil it until the tomatoes get soft than mash them.
Add salt and pepper depend on personal taste and that's it.

Simple and Tasty.  sissies

I always like to add something to the rice to make it more interesting.  yum1

Here I show how to make simple mix of champignon mushrooms with onion cut into small pieces and fried on a pan with little bit oil.

Fry and still until ready, mix with the rice and eat!  thumbup

Very simple and upgrade any simple plain white rice. hungry1

Champignon Mushrooms bought in "Makro" Buriram.
Pack of 3 cans cost about 110~ Baht.

Not expensive but hard to find in the other supermarkets such as "Tuwikit"/"Big-C" and the other small supermarkets.

Yemenite soup

Ingredients:

Chicken legs/breasts.

2 big Onions cut into quarters.

3 medium size of tomatoes.

1.5 Liters of Drinking water.

2 tea spoons of salt.

1.5 big table spoon of Yemenite spices.
(Hawayij: a cury-like, Yemenite spice mixture.
*Contains: black peppercorns. cumin seeds, cardamom seeds, saffron, turmeric).

Cooking oil.

Put the chicken parts into a pot and cook them for few minutes with little bit oil that they will not stick to the pot.
than, add the onion,tomatoes and water and boil.
Take the white foam out. (will be out off the chicken parts as you cook them, take is slowly with a clean spoon and throw the foam).
Lower the fire and add the rest of the ingredients. Cook for 30-45 minutes until the chicken is ready.

*You can eat it with bread on the side or add rice into the dish same I did in the picture below. 
Its tasty, smells good, not too spicy and I think even healthy. hungry1

*I like to add tomatoes inside and usually also potatoes, but as you can see and understand, it can be plain vegetarian soup with any kind of vegetables as well.

Back to simple farang recipes and this time a very simple recipe all of you can do at home, for beef lovers. wildman

Beef fillet cubes with onion garlic and chili.

Ingredients (Serves 1-2 persons):

300-500 Gram of Beef fillet.
1 Onion.
2-4 red Chilies.
2-5 teeth of Garlic.
1 spoon of cooking oil.

Preparations:

Cut the beet into medium size cubes and fry them in the pan (Teflon/thick pan is best).
Add salt,black pepper or any other spices you like (I like the Cumin spices mix).

Cut the onion into thin slices and the garlic into small pieces to let the taste go into the meat and cutnotch the chilies to let some spicy flavour get into the food (I like it but you can cook it without any chili if you don't like spicy food).

Add to the pan and fry it all together until you see it gets brown and mix together for about 2-3 minutes.

pickled cucumbers in salt COMPLETED !!

indigrients:

Small Cucambers.

2 red chillies.

3 teeth of garlic.

2 big spoons of salt.

1 medium size Glass jar. (Plastic jar is not recommended as the taste can be damaged).

Recipe:

-Put first the garlic teeth to the bottom of the jar.
-Put the cucambers inside the jar.
-between the cucambers put the red chilies not before you cutnotch them.
(to spice a little the pickles..).

Take 2 glasses of water (drinking water not the city hall water..  sick1 ) and mix with 2 spoons of salt untill the salt mix with the water.

*better practice is to boil the water with the salt,it will also help to shortcut the pickle proccess as well.

pour the water into the jar and close it hermetically(!).

Leave the jar in a temperature room (not inside the fridge).
Proccess will take between 4-5 days.
When the cucambers are ready keep the jar in fridge.

Was looking at the thread.  Two points:

1.  The cloudyness is probably a result of using table (iodized) salt instead of pickling or sea salt.   Saxa Sea Salt is available at Marko in the spices. 

2.  No dill in the recipe.  Dill seeds are available at Makro (unfortunately have not been about to get in Buriram or Surin), but is available in Korat and Pattaya.   

If you look at the photo, the jars on either end were canned over a month ago, no cloudiness.  And if you look you can see the dill seeds at the bottoms.

If you have a jar of dill pickles (gerkins), when you finish the pickles repack the jar (keeping the juice) with boiled eggs (deshelled).

Put in the fridge for a few days and you have pickled eggs.

You can buy  the vinegar for your pickled eggs in Tops .. Different types of vinegar for your choosing.. Didn't know Americans ate pickled Eggs.. Just shows you never stop learning..

I bought some French's Stroganoff from Big C, it came out very well.  Two other main ingredients you need are beef and sour cream (available at Macro and Big C). 

Easy to make, fry the Beef, add the Stroganoff package contents and sour cream.  The serve over noodles or rice.   hungry1

Salsa:

Two or three cups of ripe tomatoes cut into small chunks
Two teeth of garlic (finely chopped and crushed)
Three tablespoons of fine chopped onion (sweet onions work best, but any will do)
Four tablespoons of finely chopped Cilantro (AKA pa chee, or Chinese parsley)
Jalapeno peppers to taste (1/2 to 2 peppers) finely chopped (Thai chili's will also work)
Juice of 1/4 to 1/2 lime
Salt to taste

Guacamole recipe:
Make the above salsa recipe and then add two very ripe avacadoes and stir well.

Eat with corn chips (or is it crisps?)

The above will be considered complicated by many.
I find the idea of adding two avocados (expensive), I would have maybe chopped them first.

I have a similar recipe where you replace the beans ( not butter needed on the toast )  with Sardines in Tommy sauce straight from the Can . You can even sprinkle a little ground black pepper and vinegar to taste ....if you wish ;)

I guess it does show integration into Thailand though  -  perhaps eating that with a spoon and fork would complete the integration.

Sausage patties.  It was amazing to me how easy it was.


1 kilo Ground pork
1 Tablespoon Sage
1 Teaspoon Crushed red pepper   
1 Teaspoon Black pepper


Put all in Bowl, mix together.  let set for 12 hours.  Make into patties or links.   Freeze. 


Wow, very easy. Tops has sage, rest is available all over.  If you want hotter, add more red pepper.   I did for a cheese mix.

Yes ,I make these myself  hungry1

My recipe for Sofa_King's 1/4 Pounders 

1 kilo Ground pork
2 very finely chopped medium sized onions
I tablespoon of Rosedee Pork Powder
I egg

Mix together in a bowl and then put in the fridge for a hour or so

After the mixture becomes firm , you make into 4 once ( 115 gram ) balls.
You then get small 120mm x 180mm cellophane bags
Put each 1/4 pounder ball of pork in a cellophane bags and then pat the bags with your hand to make the size and thickness you prefer.
These can then be placed in the freezer and cook great from frozen .
